Рыбу почистите, удалите внутренности, голову и хвост. Отделите филе карпа от хребта.
Филе порежьте на кусочки шириной примерно 1 см.
Промойте и залейте уксусом, оставьте на 2–2,5 часа в холоде, затем промойте под водой.

Филе рыбы выложите в миску и добавьте нарезанный лук, выдавленный через пресс чеснок, сахар, соль, перец, лавровый лист и растительное масло. Размешайте все руками.
Оставьте в холоде еще на сутки. Подавайте как холодную закуску.
